ZUNI Margarita Delight
For more than a year, our chef, Gilbert Pilgram, had been encouraging the team at Rose Los Angeles to turn Zuni’s signature margarita into a Delight. Rose Los Angeles Delights are cannabis edibles crafted with chef-developed recipes, sun-grown flower rosin, and seasonal fruit from California family farms. The timing finally lined up while Rose LA was working with Pure Beauty on a collaboration featuring their Lady Pink Pre-Rolls. What started as a conversation between friends quickly became a three-way project.
We sourced citrus from Stepladder Creamery, including calamansi, Eureka lemons, Bearss limes, and Rangpur limes. Rather than choosing just one, the Rose team built the gummy around all of them. The result is bright, layered, and citrus-driven, finished with Maldon sea salt and fresh zest in homage to the original cocktail.
